Principle of cocoa powder alkalization process
The original cocoa powder, ground from roasted cocoa beans, is acidic. Mixing it with alkaline substances like sodium bicarbonate or soaking it in an alkaline solution can neutralize some of the acidity, increasing the cocoa powder's pH value (changing from acidic to neutral or weakly alkaline). During this process, the color of the cocoa powder darkens and its taste also changes.
Our engineers consulted various literatures and papers to gain an in - depth understanding of the chemical and physical properties of cocoa beans. Drawing on over a decade of experience in production line design, they developed this cocoa powder oil - pressing and alkalization production line. The equipment used can perfectly meet the requirements, and the cost investment for the entire production line is not high.
Why do this?
Better taste: After neutralizing the acidity, the bitterness of the cocoa powder is reduced, and a richer cocoa aroma is brought out. It has a smoother taste when used in making chocolates and cakes.
 
More appealing color: After alkalization, the cocoa powder changes from light brown to dark brown or nearly black, looking more "chocolate - like". It is suitable for making dark - colored desserts (such as Black Forest cake).
 
More convenient to use: Alkalized cocoa powder has better water absorption and solubility. It is less likely to form lumps when mixed with milk and flour, making it convenient for baking or making drinks (such as hot cocoa).
Specification
1.First, use an ordinary crusher to perform primary crushing on cocoa beans.
2.Next, transfer the crushed raw materials to a trough - type mixer and add an appropriate amount of water for pre - stirring to improve the efficiency of the subsequent oil - pressing process.
3.Subsequently, use a hydraulic oil press for oil - pressing operations to obtain two products: cocoa cake and cocoa oil.
4.First, manually break the cocoa cake into an approximate size of 10 cm, and then use a coarse crusher for further crushing.
5.To increase the contact area between the material and the lye and improve the efficiency of the subsequent alkalization treatment, an ordinary crusher is needed to deeply crush the material.
6.Put the deeply crushed material into a mixing tank for the first alkalization treatment.
7.After the first alkalization treatment is completed, carry out a second alkalization treatment on the material.
8.Use a press to perform solid - liquid separation on the cocoa powder mixed with lye, remove most of the water, and obtain wet cocoa powder.
9.Finally, place the wet cocoa powder in a tray drying oven for drying to finally obtain the finished cocoa powder.
